Is excessive residue a sign I should buy new mats?

I also get this cookie residue but I don’t think it’s a problem. When the black outlines start scrubbing off I would plan to replace though.

Are your macs undercooked by about 30 seconds maybe?

You should always wipe down your mats with white vinegar before piping so there is no residue from past bakes, storage, other things coming in contact, etc. Wash with soap and hot water before storing, too.

Mine do this when there under-baked. When I bake them for long enough, they come off cleanly with no issue.
