    The thing that confuses me about this is that it implies he juiced the onions and cooked it down. When making a broth, I’m more used to sauteing the onion in oil and eventually adding liquid once there’s some color. I wonder how the cooked juice would taste in comparison.

    Onion jus is not typically juiced onions, but rather the juice after cooking onions using a moist heat technique like braising.
