It is a tri tip.Do I trim them off? One side is basically covered with the membrane.

    I’d give it a trim for sure. Should come off relatively easily, especially if you pull up on it as you slice. It’s just not very pleasant for eating.

    A thin filet knife can take it off easily. Get the knife under, hold it down with your other hand to create tension, then you should be able to pull your knife though while staying under it.

    The silver skin (thick membrane) is the only part that needs to go, the rest won’t matter much & will cook off.

    Use a paper towel, it gives you good grip. I’ll use a butter knife or spoon to help separate.

    Trim and use the sharpest knife but jsut lightly glide the knife so it doesn’t cut into the meal, you can render it for some tallow! And honestly render it with some mushrooms and onions and You’ll get the best mushrooms and onions caramelized in beef fat

  5. Sharp knife and cut it off. It’ll toughen the meat and be unpleasant to eat.

    Trim it and throw it in the stock pot. Or feed it to the dog.
