#3 bothers me, cuz I love the delicious tendons around the bone and did not grow up poor. Cartilage is another luxury known to be associated with being poor. Ox tail was known to be a poor persons ingredient and it became luxury over the years.

this is as you get older you move from 1 to 3. when ur young, just eat the meat. when ur old, eat the cartilage and clean the bone

Wow that hits close to home lol. Grew up dirt poor as first gen immigrant and now household income in the seven figures but my galbi bones still look like #3. Always will. And lights go off the instant there’s no one in the room.
