halibut, green curry, sunchoke risotto, blistered bok choy
not happy with the sear on the fish. other than that it maybe is a little cramped? idk

* More negative space for sure. * Sear is looking a little uneven on the fish – maybe more press next time * Id probably do a stack with wide shallow pool of curry, small shallow mound of rice. fish on top of that, maybe a little of that green herb oil on the fish and around the rice. That green tho does help break up the sea of beige * Not sure what to do about the bok choy, other than maybe use baby bok choy instead of these long old stalks. This way you could splt the bok choy and get a much harder sear. currently they just kinda look sad and droopy with no apparent sear. Potentially you could also do a bigger portion of bok choys as a side instead of trying to incorporate into the plate.
