Costco New York strip ~1lb ~1.5in, seasoned with salt and pepper before sous vide. cooked at 131 for 3 hours, patted down and 10 minuets in fridge before 1:15 mins on each side and 2 mins on fat cap.

9.3/10 best steak I’ve cooked ever this sous vide thing is amazing. Great texture and flavor girlfriend loved it. Made some cheesy potatoes for the side. And suggestions to make this even better I’m open.

Looks awesome, don’t think you need to change anything. If you want a suggestion, make a sauce with the bag juices and the liquid on the plate that the steak was resting on! And personally I like to trim off some of that fat either before bagging or before searing, but certainly not necessary.

That’s the exact temp I do my Costco strips! I think it’s perfect

  6. You can sous vide more than you are going to eat (separate bags of course) and put them in a ice bath immediately after pulling them out of hot water bath you can put them in the fridge to eat later that week or what I like to do is freeze them. Then you can bring them back to temp in the bag and then sear and eat. My freezer is full of tri tips and other cuts that are ready to go
