I just made this picanna sous vide. I had to weight it, otherwise its wanted to float. After searing, this is what it looks like inside. Is it safe to eat?

    How long did you sous vide for ? I had a tenderloin sitting on 125 overnight and it looked similar.

  4. I don’t think I’ve ever seen a steak look like this before. But if it smelled fine before you cooked it, you should be fine. Maybe just bad quality cut.

    This may just be a weird guess, but is it possible the roast had steatosis and all the fat rendered out during the sous vide process leaving the meat to look like this?

    To me it almost looks like a smoked brisket when the fat is almost completely rendered out.

    I’ve had this happen with short rib. This is overcooked and over-rendered. It’s fine to eat but it won’t taste so great. Can I ask how long you cooked it for? My short ribs that looked like this were in the bath for over 24 hours and were extremely soft and mushy with a flavor that I can’t even quite describe other than bloody and metallic.
