

First time cooking a chuck. How did I do?
2.5lbs
Pre Seasoned with salt/pepper
90 min in the oven at 240
Rest for 30 min
Dusted some salt, hit again with pepper and thyme
Seared on high one minute each side in 4 Tbs avocado oil, 2 Tbs butter, a Tbs garlic oil, 2Tbs bacon grease.

Forgive the cutting. Shitty knife and I’m new to steaks. I felt I did a poor job identifying the grain direction.

Try outside skirt and Picanha, both incredible cuts at less $$$ than premium cuts like ribeye.

A real shame meat’s went up so much recently, used to routinely get it for $8/lb, now it’s $14 pretty much all the time. Crazy that it’s almost doubled in a little over a year.
