Seasoned with a coffee/ancho chili rub. Turned out great! The meat was really tender almost too soft honestly. I’m going to see what the 137F hype is about next time.

    Idk what you did for the sear but if your oven finishing it I usually go for about 10 to 15 minutes at 500 after brushing it with melted butter.

    Let it sit in a cold bath for about 20 minutes first tho so you dont lose that beautiful wall to wall pink.
