Oven 225 until internal temp of 105. Cast iron as hot as possible. Direct sear in canola oil. Flip. 3 tbs of butter. Garlic. Thyme. Baste a few times. Flip and baste 3 more times for 30 seconds each flip. Pepper. Finishing salt. Let rest for 15 minutes. Enjoy.

    That color is unreal. Reverse sear absolutely paid off. You nailed that cook. Garlic on top is the right move.
