
I’m never going back to plain toasted bread.
- Butter your bread like normal.
- Grate a thin layer of Parmesan or Sharp Cheddar directly into the pan.
- Place the buttered side of the bread right on top of the cheese.
- Flip once the cheese forms a crispy, lacy "shingle" (frico).
You get a crunch that bread alone can’t provide, and it tastes like a Cheez-It had a baby with a sourdough loaf.

I always do this. It’s not grilled cheese without GRILLED cheese! Definitely use a nonstick pan for this purpose, though (including your favorite cast iron, just mean a pan you don’t expect things to stick easily to)

I do this with parmesan and garlic herb butter
Frico crust is genius—crispy, cheesy armor outside, melty center inside. Parmesan or sharp cheddar works best for that lacy crunch.
Does the bread get browned and crispy like normal, if it is sitting on a layer of cheese in the pan?
