    In my book now, any fatty premium gets reversed seared via smoker

    And any leaner cut gets reversed seared via sous vide

    Only way I’ll do steaks now. My husband was the “grill master.” I’ve taken over with reverse sear finishing in a ripping hot cast iron skillet.
