
I posted yesterday about accidentally grabbing the wrong seaweed – i found an unopened package of wakame deep in the back of my cupboard, so i didn't have to experiment with the one i bought. this turned out so freaking good, i can't stop thinking about it. might be in my top 5 favorite soups of all time.

There’s a reason why Koreans usually don’t put green onions in 미역국. Though green onions are commonly used in most Korean seasonings, you should avoid adding them to seaweed soup. Green onions (파) and seaweed (미역) don’t mix well nutritionally. Green onions contain high amounts of phosphorus and sulfur, and when mixed with seaweed soup, they interfere with the absorption of calcium from the seaweed, greatly reducing its nutritional value.
In addition, adding green onions while boiling seaweed soup can damage the seaweed’s natural flavor because of the slippery substances found in green onions. Green onions also contain components that inhibit the absorption of iodine, so consuming them together is not recommended.
