
I wanted to make carnitas, but the traditional recipe calls for oranges and I'm allergic, so I created my own recipe.
I went with pineapple juice, grapefruit juice, liquid smoke, pickle juice and lime juice. I did a dry rub of brown sugar, cinnamon, and salt, and for my aromatics I added bay leaves, garlic, shallot, and pearl onions, the lime rind and the grapefruit rind. I sous vide my meat at 165 for 24 hours. Cooked my sauce down, shredded and broiled my meat.

Thats seasoned shredded pork. There is ZERO flavor profiles in that to call it carnitas.
