I went to Cosme a couple months ago and it was incredible, and one of the best things I ate there was the scallops al pastor, and I’ve been thinking about making them in the Sous vide ever since, these came out great.

Whole Foods scallops w salt pepper butter and generous al pastor seasoning —> 123 degrees x 45 minutes —> ice bath x 5m —> sear in hot cast iron —> dressed and served w dot of green sauce, white onions, cilantro, and pineapple

    I love my sous vide but things like scallops or shrimp really seem like a stretch

    Cooking them longer isn’t going to make them more tender or anything and they cook through to the center pretty perfectly with a one or two minute sear on each side. The quality of the scallop itself and the sear are really the only things that are going to matter at the end of the day

    You’re kinda just adding 45min and some plastic waste to a process that will get the same results without it
