You’re gonna make people mad with the pan, but you’re also gonna prove that you can get a good sear with any hot piece of metal and you don’t need a fancy $200 carbon steel pan. Enjoy your steaks.

Don’t listen to them. I love my Hex Clad, although I do cook steaks in my cast iron. Turn those babies on their edge and go around real quick to sear them and cook any side fat. Yum.

I think that sear looks pretty great. I like basting it with butter as well. Sear those sides too

Not my favorite type of sear.. this sear is surface level and a thin layer.. i like mine a bit thicker and can only be done with a very hot pan.
