Truly one of the best steaks I've ever made. I open the grates on my Pitt Boss, set to 500 and let it get to temp, and then sear each side to my liking. The fiances always waiting inside with the butter. She's the real MVP

    Some will say it’s burnt on the outside, but fuck that looks awesome to me. Sometimes I love a great char with a cook like that.

  4. Burning the outside is not a good sear. It brings a bitter, unpleasant charred flavour.

    You want to be shooting for a nice brown crust.
