If I had to pick one steak for the rest of my life:

– 1-1/2” thick well marbled tenderloin 10/12 oz

– 4 hr dry salt cure on wire grate at room temp flipping every 30

– In oven on wire grate at 210f for ~90 min flipping every 15 until 130 internal

– rest for 15 on wire grate flip halfway

– black/white/green pepper

– cast iron 3/4 heat on induction top

– sear with 2 tbsp tallow 1 min per side 6 min total with even moderate pressure

– rest 5

– serve with your favourite red and a cold glass of Asahi
