    Get the outside more dry after removing from sous vide bag. Paper towel + on rack in fridge or with a fan blowing on them for a few minutes. You’ll get a much better sear

    Describe your process for the asparagus. It’s one of my favorite sides but unless I cook it on the grill it turns out soggy.
