Finally tried the Italian method and I dont think I will be going back to the French method

  1. What do you like about the Italian method more than French? I’ve only ever tried French!

    Ps- the powder sugar looks a bit like mold on the blueberries. People I’m sure will know it’s not, but first glance it looked like it to me

    One thing that never gets explained in videos/recipes and I hope someone inc maybe OP can is…How do you time the meringue mixing and the 118c so it happens at the same time

    Amen. It’s a little bit more complicated but the results are more consistent!

    Whenever I do French, even when I follow the same recipe, something goes wrong (usually hollows)

    But Italian! Good every time and no hollows. Thank goodness no hollows.

    Your macs look great! Which Italian recipe did you use?
