    You made some mistake, the egg is all the bottom of the plate and not coating pasta like a thin cream.

    I switched to mezzi rigatoni too, used to do it with bucatini. I won’t be going back, mezzi rigatoni were amazing for size and holding on to the emulsion and guanciale
