I was gifted some nice chops for my birthday from Snake River. I thawed these and left them uncovered in the fridge overnight. I cooked them primarily over gas then finished them over hardwood coals on the solo stove. I was very happy with the results. That’s about as minimal gray band as I’ve been able to get.

    Snake River is no joke. Everything I’ve had from them is worlds better than any butcher shop I’ve bought Prime meats from. My last purchase I bought a Tri Tip and Picanha that were absolutely fantastic. I have a Prime Ribeye dry brining in the fridge right now for tonight can’t wait.
