Got da sampla’ (not called) that at Atarantados in Condesa. They specialize in a variety of Trompo and these represent one each of Pastor, Res, Res con Chicharrón, y Trompo Negro (pork with a black rub / marinade).
Excellent array, the Negro was my fav.
