    Vanilla Cremeux – Matt Adlard’s recipe, added extra vanilla

    Vanilla Almond Praline – used a shortcut.  Blended almond butter with vanilla beans and pressed through a strainer. Made a dry caramel and blended into a coarse powder.  Wanted some texture. Mixed into almond butter mixture to desired sweetness

    chocolate dip – melted 1/2 dark choc and 1/2 cocoa butter, cooled to 90F before dipping

    Vanilla bean rub – mixed a scraped vanilla bean with a little vanilla paste

    Writing out all the steps to assemble is way too long and its much easier to see the entremet technique on a youtube video
