It’s disgusting. I put so much tomato paste and use it as tomato sauce. I hate myself. And I need to eat this bullshit after one hour of cooking

    Add more water and pasta and make a large batch of pasta. Store it for lunch for a couple of days. Won’t taste ideal on the following days but at least you won’t have to suffer through them

    For future reference, you can probably omit tomato paste. Just tomatoes, onion, garlic, salt is all you basically need.

    If you want to fix that, maybe some cream or cream cheese would mellow out the flavour.

    What does it taste like now? Sour or sweet or something else?
    Like tomato soup?
    If all else fails add some butter.

    Tomato paste in a tube is also 2x concentrated so that may be an issue. You add sugar only if using crappy tomatoes. If you use any supermarket canned Italian tomato you will not need sugar. But it’s pasta. Dump it in a colander to drain the sugar sauce and make yourself something baked with savory additions like parm and olives.

  7. Wash it off with cold water in a strainer. Throw it back into the pan with some olive oil, pepper, chili flakes and cheese.

  8. Ok maybe drain the pasta, put it back in hot water for 5 seconds or rinse it. Then just butter the pasta and keep this sauce for next time

    In addition to less tomato paste for next time, cook the tomato paste at a moderate heat for a little bit and it’ll lower the acidity/sour flavor, turning it into a brighter flavor.

    A box of pasta is also about $3, so start over and have fun finding a better recipe is always an option. You didn’t screw up beef Wellington or Dover sole.

    Tomato paste is not great for a full blown pasta sauce. Coming from experience.

    Oh gross. Baking soda NO! Milk NO! Start over. Toss it all!

    Try this;

    1/2 sweet yellow onion sliced or diced
    1 clove fresh crushed or minced garlic (or more if you love garlic)
    1/2 lb fresh sliced mushrooms sliced
    2 stalks celery sliced
    2 tablespoons extra virgin olive oil + 1 Tablespoon butter
    Sauté about 15 mins on medium/high or until the onion is translucent

    Add:
    1 15 oz can of tomato sauce and 1 15 oz can of diced fire roasted tomatoes

    Add:
    1 tablespoon Italian seasoning
    1 teaspoon sugar
    1 tablespoon Lawrys season salt
    1 tablespoon ground black pepper
    1/2 cup red wine (any kind will do)

    Simmer at least 30 mins.

    You can add cooked ground beef, turkey, pork or Italian sausage

    Cook pasta of choice and top with pecorino cheese. Serve with green salad and garlic bread. Serves about 6

  16. Do you put any salt in it? If I use tomato paste, I usually add more salt. Take one spoonful, sprinkle a tiny salt, check if it improves

  17. Try balancing it with a little sugar, salt, and acid. Also another good route to take is make a bit of bechamel/white sauce, and dilute the strong tomato paste flavor. Even just a splash of heavy cream if you have it, or some half and half or milk in a pinch.

    It’s better, in the future, to keep cans of tomato puree, or whole plum tomatoes in your pantry rather than tomato paste. Tomato paste is a good tool, and ingredient when used sparingly but the other two I mentioned will make a great actual base for a sauce.

    I also will dice up garlic and onion, sauté it.
    Add ground beef cook that, drain or push in a paper towel to get extra grease.
    I also add dried garlic and onion powder to sauce, but a few dashes of each.
    Salt pepper

    Then I’ll add maybe half can of chicken broth,
    Half can of tiny tomato paste,you could also add peeled and diced from a can, tomato chunks. bug depends on what person want. I use about 1/2 can
    Stir and press onto it to try and make rotations ground beef as small and broken up. I don’t like no funky chunkys! 😉

    Then a couple good splashes of red wine,
    A teaspoon of sugar (I use about 2.5 though)
    I’ll put 2 teaspoons of milk,
    Keep stirring,
    I’ll add a tablespoon of butter and then throw some Parmesan cheese like the (Kraft type) consistency.
    Cook about 45 minutes cover as it can get messy like a volcano keel on low heat.

    Then boil water
    Put pasta in
    Towards end of pasta cooking take a cup of the pasta water in sauce.

    Mix’n and enjoy your fix’n!
