I ❤️ sushi rolls with purple rice now. I don't know if I can still eat regular sushi rice.
The first rolls is the Stray Cat roll at Roll Factory, Old Pasadena, CA. It has tuna, salmon, yellowtail & crab.
The 2nd is a spicy tuna roll.

I guess food coloring adds umami?
I believe they used black rice to color white rice, I’ve achieved similar results although it wasn’t for sushi

Not that they aren’t good but purple rice is still primarily just white rice. It shouldn’t taste much different.
