This morning I threw myself back in time, as I was feeling a bit nostalgic. Growing up my father, who has passed used to make this for my siblings and I and simply called it "bacon, eggs and potato chips"
So today it's what I made. Crushed up plain potato chips, bacon pieces and poached eggs. Mix it all together and you have a strange but delicious combination.

This is kind of like a very traditional Latin American breakfast called chilaquiles except the chips are cooked with enchilada sauce. You can throw anything else you want in them and often eggs are served on top. ¡Que rico!

Try thay with tortilla chips, salsa Verde and some queso fresco and you’ll basically have chilaquiles!!

My mom made eggs and corn cereal like Special K or Kellog19 when I was a kid and I sometimes make it when I am in a hurry.
I actually think this would work with Frosted Flakes as well, which is what I thought they were.

Chips as us in the uk call them are crisps. But serve this with so “French fries” or what ever you call them would be ace!

This is a thing in Spain. Lots of bars serve dishes of potato chips with all kinds of toppings and they love to put fried eggs on top. It’s such a good combo.
