Soooo I might’ve done something crazy….cinnamon pull-apart focaccia

    Here’s the basic recipe:

    – 256g bread flour
    – 227g water (80°F/26°C)
    – 5g yeast
    – 2g salt
    – 3/4 cup brown sugar
    – 1/4 cup white sugar
    – 2 tbsp cinnamon
    – 4 tbsp non-salted butter
    – 1 tbsp vanilla extract

    Mix the flour/salt/yeast/water and let sit for 45 minutes to hydrate. Then do 3 sets of stretch and folds, followed by 2 sets of coil folds all separated by 30 minutes of rest. Once you finish the final coil fold, let rest for another 30 minutes.

    Brown the butter in a saucepan and add the vanilla extract. Take golf-ball sized chunks of dough and coat them in the butter, then dip in a mixture of white sugar/brown sugar/cinnamon. Place the chunks into a parchment-lined and greased 8×8 pan. Cover and let rest for 1 hour. Bake at 400°F (205°C) for 25 to 30 minutes.

    Curious how you feel it compares to regular pull apart bread? Is it worth the effort?

    I made the “cinnamon bun focaccia” bread a while back when it was being posted like every other day on here and I thought it was good, but for me the amount of oil you have to use (because ya know.. focaccia) made it not worth it.

    You’ve made monkey bread, nothing crazy about it. I’ve done the same with focaccia dough, split half into usual savory and made the other half monkey bread
