    Into two separate food safe five gallon buckets with screw top lids went the briskets. Solution consisted of kosher salt, raw sugar, saltpetre, peppercorns, black mustard seeds, bay leaves, whole clove, whole star anise, ground ginger, whole allspice berries, juniper berries, whole coriander, cinnamon sticks, crushed red pepper, and Aleppo pepper.
    The ratios for the solution are one cup kosher salt, 1.5 cups sugar, and two tablespoons saltpetre per two gallons of solution. I use two gallons of solution per 5 lbs of brisket.

    I was going to do one this year but then I saw the price of brisket. :/
    It sure looks good though.
