  2. Sorry OP but watch out with non-stick baguette trays. The coating om the trays can probably only handle 250c celcius (480F) and your oven is most likely much hotter than that.

  3. I wouldn’t use a tray like that, use a long bread peel and let it cook on the oven floor so you don’t have to turn it to get even.
