I ran it for 48 hours. I removed some of the fat and just seasoned it with salt and pepper. It shouldn't be a problem, right?

    I did it for a day. It was OK but not great. It was better when I made a stew instead. I ended up cutting up the meat for use in a stir fry which was quite good.

    Because of the connective tissue you should got to 62 – 65 C.
