I’ve been making sourdough for a little over a year now. Grew the starter (Lucy) from scratch! It’s been so much fun. I really love it and love this community of like minded bread lovers. I’ve learned SO much by following this sub. Can’t wait to bake more!

– 500g bread flour

– 370g room temp water

– 100g starter

– 12g salt

Mix water and starter till fully dissolved then add flour. Let sit 30 min. Then sprinkle in salt and fully incorporate by doing a few slap and folds (hopefully that term is right). Then every 30 min perform stretch and folds, 3 times total. Bulk ferment based on house temp (ex 11 hours at 65 degrees). Put in fridge overnight or for about 12 hours. Preheat oven with Dutch oven inside to 500 degrees. Score and put sourdough in oven and lower to 450 degrees for 30 min. Then remove lid and leave for another 15 min. Remove from oven, let cool (if you can wait that long) and enjoy!
