

These are my 5th and 6th loaves of bread. I usually follow the above recipe for 500g flour. However, I’ve been using a 9 inch banneton and I have a 8 inch bowl as well. I decided to test it out side by side today to see if bowl size really makes a difference and it definitely does. The 8 inch bowl rose higher (first pic) with a more defined ear while the 9 inch bowl (second pic) spread out more and didn’t rise as high. I’m gifting one of the loaves so I’m glad I tested out both. I guess I’ll have to get a 8 inch banneton if I want to keep using those… 😭 moral of the story get the right sized bowl for the amount of flour used.

Yep. To large and it allows the loaf to spread out as the gluten relaxes.
Oh! This is good to know. I just used that exact recipe with a 9 inch banneton. Now I gotta buy an 8 inch and try it.
Or scale up the ingredients amount to fit with the 9inch banneton you already have?
Of course you can still get another 8inch banneton, but if you from time to time would bake 2 loaves at the same time, would be great to have both the 8inch & 9inch in use side by side I suppose!
I made some small boules using glass bowls as bannetons and I loved how they turned out. I haven’t bought smaller bannetons yet but have noticed that some are more low slung with wider bottoms than my bowls and I suspect I wouldn’t get the same rise from those.
