The Spiced Kofta-Burger Tortilla Wrap
​Ingredients
​For the Beef Patty:
• ​Ground Beef: 2 lb (approx 1kg)
• ​Aromatics: Finely chopped onion and fresh parsley
• ​Binder/Moisture: 1/3 cup plain Greek yogurt & 1/4 cup tomato sauce
• ​Spices: 1 tbsp salt, 1 tsp black pepper, 1 ½ tbsp kofta spices, 1 ½ tbsp paprika, 1 tbsp turmeric
• ​The Core: 1 thick slice of your favorite cheese (Cheddar or Swiss) plus a handful of shredded mozzarella
​For the Wrap & Toppings:
• ​Tortillas: Large flour tortillas
• ​Veggies: Onion slices, tomato slices, and fresh lettuce
• ​Finish: Butter or oil for pan-searing
​Instructions
​1. Prepare the Kofta Patty
​In a large bowl, combine the ground beef, parsley, chopped onion, Greek yogurt, tomato sauce, and all the spices. Mix thoroughly until the spices are evenly distributed.
• ​Stuffing: Take a portion of the meat and form a large ball. Create an indentation in the center, stuff it with the cheese slice and mozzarella, then seal the meat around it.
• ​Shaping: Gently flatten it into a circular patty, ensuring no cheese is peeking out (to prevent leaking).
​2. The Searing Process
• ​The Burger: Cook the patty over low-to-medium heat. Because it is stuffed, it needs a slower cook time to ensure the center melts without burning the outside.
• ​The Veggies: In the same pan (to soak up those beef juices!), sauté your onion and tomato slices until they are softened and slightly caramelized. Set aside.
​3. The Fold Technique
​Place your tortilla flat. Using a knife or scissors, make a single cut from the center of the tortilla down to the bottom edge. Imagine the tortilla has four quadrants:
• ​Bottom Left: Place your cooked cheese-stuffed burger.
• ​Top Left: Add the caramelized onions.
• ​Top Right: Add the cooked tomato slices.
• ​Bottom Right: Add a handful of fresh lettuce.
​4. The Final Crisp
​Fold the burger quadrant up over the onions, then over to the tomatoes, and finally down onto the lettuce. You should have a thick triangle.
