    Looks great! Next time go the whole smoke without wrapping it, only wrap at the end after it hits final temp with some tallow. You’ll get the bark you want, just spritz every hour after the first three hours and you won’t have to worry about it being to dry on the outside and you’ll get an amazing bark

    Is there a method to use it out of the package?
