I used the animal-free egg whites from Healthier Comforts.
I followed the recipe from the Vegan Proteins YouTube channel, with substitutions: I used 180ml of saffron water instead of plain water and 1 1/2 t of rose water for the flavoring extract. The clients of my vegan catering are excited about this one 👩🏻‍🍳
