I don’t love this plating (too chunky, heavy, ramen feels more about delicate and deliberate imo), but I love that white broth, that’s very impressive.

Egg should be cut. Run a cake tester wire thru it for a clean cut if it soft boiled. Don’t love the knife cuts on the scallions. Don’t love the foamy nature of the broth. Don’t like the thickness of the chicken slices.
