    I don’t love this plating (too chunky, heavy, ramen feels more about delicate and deliberate imo), but I love that white broth, that’s very impressive.

    Egg should be cut. Run a cake tester wire thru it for a clean cut if it soft boiled.
    Don’t love the knife cuts on the scallions.
    Don’t love the foamy nature of the broth.
    Don’t like the thickness of the chicken slices.

    Do like the chili oil
