I was making homemade cultured butter and ended up with some buttermilk. I didn't want to waste it so I decided to add it to my sourdough and it is probably the best single piece of bread I have ever tasted in my life 🤤😍

Recipe:

500 grams bread flour

250 grams homemade buttermilk leftover from cultured butter

125 grams water

11 grams salt

115 grams starter

3 stretch and folds 30 minutes apart

BF on the counter for 8 hours

pre shaped and rested for 30 minutes

shaped and put in a sandwich loaf pan, covered in plastic bag

cold fermented in the fridge for 13 hours

baked at 450F covered for 30 minutes, uncovered for 13 minutes

I also made some ricotta and had some whey leftover, will be baking that loaf tomorrow 🤞🏼

    I just last week made butter
    And I don’t eat butter milk due to the high fat but now this is my next go to. Once I finish my butter. Great bread
