I felt like I had to trim so much of the fat. Hopefully it turns out well. Wish me luck.

looks perfectly trimmed to me
back in the day I only bought them untrimmed, but between the prices of beef and the amount of fat that gets left on “untrimmed” I just grab the trimmed ones now

Such a great cut of meat. I’ve been cooking it like a steak lately. Ill cook it until it hits 140-145 then sear that bad boy then put some compound butter underneath and on top while it rests. Damn my mouth watering describing it lmao good luck on the cook.

Just cooked my first yesterday and absolutely loved it. Wish it was a more popular cut up here in the northeast. Local butcher is gonna have me showing up weekly for it 🤣
