



This has been my go-to dinner for several weeks now (I know, boring).
Ingredients in the photos. I get 4 portions out of the amounts mentioned, but YMMV.
Cooking Instructions:
Saute finely chopped onions in olive oil until golden brown.
Add finely chopped garlic and salt and cook for another 1-2 minutes.
Add ground chicken and cook until most of the water evaporates and the chicken turns white-ish, but don't dry it out completely.
Add all the veggies. Add coriander powder and chilli powder of your choice (I go by vibes, so unfortunately, I don't have exact measurements for these). Cover and let it cook for a few minutes until everything becomes tender.
Add finely chopped tomatoes and cook for 10-15 minutes until all the water starts thickening into a gravy.
Add garam masala (or any other curry powder if you don't have garam masala). Cover and cook for another 3-5 minutes (stop before all the water is lost, as it will continue to lose/absorb water after you switch off the heat).
Add-ons
– If you want to add more carbs, this pairs really well with rice or air-fried potatoes for some crunchy texture.
– You could also put this in a burrito.
