after several fails, a few edible but not great loaves, it finally happened 😍😭

recipe (double batch):

200g starter

650g water

1000g bread flour

20g salt

mix dough in kitchenaid mixer for about 5 mins, put in a clear bowl to rest for 1 hour. perform 4 sets of stretch and folds 30 mins apart

sat at room temp for 5 hours

preshape, rest for 15 mins

shape and put in fridge for cold proof overnight

I did one round loaf and cold proofed in a bowl with a floured tea towel, and did the other in a loaf pan

Baked at 450 for 30mins with lid on, then lid off for 15-20mins (I know the round one needed more time but I had to go lol)

it tastes delicious and I am so proud of my starter Fernandough!
