



Started with pie crust, as that’s what most homemade versions use, but it wasn’t quite the Pop-Tart texture I was going for. Switched to a sweet, tender shortcrust pastry and that seemed to work. Brown sugar cinnamon filling, finished with a cinnamon royal icing and sanding sugar.

I can practically smell the brown sugar and cinnamon through the screen. There is nothing better than a warm, frosted cookie like this.

I made strawberry pop tarts this week and while incredibly delicious, almost all of them leaked despite only using the specified filling amount. Could you share any tips?
Did you use a cutter to make them so uniform or was it freehand?
Also, how did you prevent any filling from leaking out?
