very bottom that you canโ€™t see is a blend of iceberg lettuce and red cabbage dressed in a knockoff nuoc chom sauce (vegan fish sauce, minced ginger, lime juice, a lil sugar, and i like rice vinegar in mine for some more acidity!)

next layer is vermicelli noodles and then topped with bean sprouts, cukes, quick picked carrots, red bell peps, mint leaves, and tofu in a homemade peanut gochujang sauce which we also dressed the top with!

my go-to summer meal starting early this year! and any leftovers go great rolled into a summer roll!!!
