
Almost never have the time to babysit a traditional rustic looking sourdough, and just wanted a basic sandwich bread that is a little more all-purpose. Been using this Pan de Mie recipe for a while now and it’s consistently great, but I wanted to try my own sourdough version. Very happy with how it came out and the sourdough definitely takes the flavor up several notches.

I used 200g active starter (fed before going to bed). First thing in the morning I add the starter to the wet ingredients. I subtract 100g each of flour and milk and forgo the instant yeast. Knead with a mixer as instructed. First rise takes about 3-6 hours, shape rise in the pan another 3-6 hours. Bake as instructed.
I’ve also used this blog for a brioche Pullman with excellent results. There is a sourdough Pullman recipe on the blog too but I don’t see one for a 13” pan like I have so I just adapted the one I have been using and am glad I did. Takes a while longer but definitely a lot more set and forget than a regular sourdough.
This one’s a keeper for sure.

That looks perfect, like it was extruded from a die.
Forgot to mention, on the last rise I wait till it gets till an inch or less from the top before placing on the lid. With commercial yeast if I wait that long it spills out and my loaf ends up having a weird deformed cracker thing attached to it I have to trim off. But the sourdough isn’t as rapid so I definitely let it get a good bit closer to the lid.
