First…I know what authentic Mexican food looks like and this is not it. I made this once because had some loose ends kicking around and have made it many, many times since. Pop a gummy before you start cooking.

Bottom to top: Flour tort(I’d actually recommend flour/corn blend) Cheddar, lightly charred Kielbasa, mango(big chunks), cilantro red onion, salsa verde (avo salsa works well too)

I’m telling you — Kielbasa effin rocks as a taco protein.
