I added one extra stage of 30-45 mins room temp proofing before shaping then cold ferment, this has resulted my most evenly blistery batch I’ve ever made

    These look amazing bud. What shaping method are you using? I’ve only done bagels a few times but the only two I know of are poking your finger through them and stretching them around or forming them around your hand. And this doesn’t look like either of those haha.
