Made a rough 6" trial run on a cake for Easter, planning to do 4 layer 9". Gonna up the blueberry just a bit. I'm thinking of doing lemon curd between the layers instead of the buttercream. Also thinking of cutting off the tops to expose the crumb allowing the curd to absorb a little into the cake. Happy with this one but think the curd would add a little pop. Thoughts?

    This looks so good!! I definitely think adding lemon curd would be fantastic. Lemon and blueberry are a great pairing and adding moisture to the cake like that sounds divine.

  4. That looks so so good. The distribution of the blueberries seems to settle to one side. Did you toss the blueberries in flour before mixing it in the batter? I find that helpful.

    The curd will absolutely take it up a notch!! Don’t forget a “moat” of buttercream on the outer ring of each layer to keep that curd from leaking🫶🫶 you could absolutely make a layer or two of a homemade blueberry jam (relatively easy with some sugar, water (could use a little lemon here too!), and frozen (or fresh) blueberries—I prefer frozen blueberries because they seem more flavorful!!

    The cake you made here looks perfect!! I am sure whatever you make will be divine!

    Any version of lemon and blueberry will always be my favorite. My husband and I had that for our wedding cake. 💙 Yours looks just as delicious and beautiful as ours did on our special day.

  10. I made a lemon raspberry cake yesterday for my birthday. I added lemon zest to the sugar and massaged to extract the oils. I also added lemon juice and lemon extract to the batter. The frosting had lemon juice and zest. It was the perfect amount of lemon.

    Lemon curd between the layers is an absolute yes from me, it will give it that gorgeous sharp tang against the sweetness of the buttercream. I did a lemon and blueberry cake for my daughters birthday last year and the curd made such a difference, it went from lovely to properly special. The only thing I’d say is make sure you do the buttercream ring around the edge like someone else mentioned otherwise the curd just goes everywhere when you stack them, I learnt that one the hard way

    Yesssss, I love lemon flavored things but I feel especially in cakes they can be a tad too sweet and I can only eat a small amount. However blueberry with lemon cake! Oh yes that would balance the parts of lemon cake that keeps me from being able to eat more, even when my stomach wants more but the overly sweetness keeps me away from more

    Maybe I have just OD’d on too much lemon curd over the past few years to the point I’m not really into it anymore but it looks like you have a beautiful cake and sounds like pretty well balanced flavors. The lemon curd has such a strong flavor I’m not sure if it would take over a bit and make the flavors less balanced. Maybe you could make a mini batch of lemon curd and spread a little on your test cake and see whether you think it improves or detracts from the flavors. More is not always better. Adding a little lemon extract and double the amount of zest might give you the lemon boost you seek. If you do test it out, would be very curious regarding your final testing and decisions. Good news, though is I really think it can’t go wrong when it comes to this cake – variations one way or another will still be amazing. Personally (since you asking for opinions), I also really don’t care for buttercream any longer, I find it cloyingly, one dimensionally sweet. A lemon cream cheese icing, though, that is for sure a swap I would make if I were making it myself (which of course now I want to after seeing your gorgeous photo!).
