This is supposed to be a copycat recipe of an Italian chef take on brioche buns (Rocco Cannavino or Uncle Rocco).

It’s a chocolate brioche stuffed with a frozen chocolate ganache puck. I was aiming for a liquid chocolate filling (like the one in the video) but mine was custardy after baking, which is weird considering I used the same ingredients and ratios. I will try reducing cornstarch next time.

The final product is very good, but I’m always disappointed by cocoa flavored bread/brioche. It doesn’t really taste like chocolate. I think a standard brioche would have been a better choice. The custard is absolutely delicious though. I used Valrhona Guanaja pellets and Van Houten unsweetened cocoa powder.

Those were eaten with homemade salted butter caramel and homemade vanilla whipped cream … so so good.
