Got this from Sam’s a while ago for less than $5/lb. It’s a boneless leg of lamb. Any recommendations on how to season it and even cooking recommendations? I want to cook it low and slow and get it to very tender – like a good roast beef. I don’t want to go fast and shoot for med rare for slicing.

Believe I have all I need – rosemary, thyme, oregano, parsley, garlic and other spices. Also have lemons and can zest if needed.
