
I picked this up at a grocery store in Matsue, Japan earlier today. The label just said, six types of nigiri. The circled one was amazing and not something I recall having before. The edges were seared. Any idea what it is?? I would so love to have it again.
(Can't just return to the store and ask as I'm already gone. I ate it on the train.)

it’s sea bream probably, it’s common to sear it like that because it has no flavor otherwise
if you order it in the us at a non expensive place you will get tilapia though lol

A cheaper white fish. I think they brushed sauce on it and seared it for flavor. It’s good idea because the white fish they use at most sushi places is typically bland.
It’s 100% aburi salmon as another comment mentioned.
